Apples are as American as Mom, hot dogs and … well … apple pie. Celebrate the Fourth of July with four appealing apple recipes like these delicious apple cookies. Pictured are Margo M. Mobley’s “My Apple Cookies.”

No matter how you peel and slice them, apples are
a great American way to celebrate Independence Day
My Apple Cookies 2 cups sifted all-purpose flour 1 t. baking soda 1 cup vegetable oil 11⁄3 cups packed brown sugar 1⁄2 t. salt 1 t. cinnamon 1 t. ground cloves 1⁄2 t. nutmeg 1 egg, unbeaten 1 cup chopped nuts 1 cup finely chopped unpeeled apple 1 cup raisins (optional) 1⁄2 cup apple juice or milk
Preheat oven to 400 F. Sift flour with baking soda. Mix oil, brown sugar, salt, cinnamon, cloves, nutmeg, and egg until well blended. Stir in half the flour mixture. Add nuts, apple and raisins (optional). Blend in juice or milk, then remaining flour. (Batter will be similar to cake batter in consistency.) Grease cookie sheets. Drop by rounded tablespoons of dough 2 inches apart. Bake 11-14 minutes or until done. While cookies are hot, spread with glaze below. Makes approximately 31⁄2 dozen cookies. (Editor’s note: we baked cookies for about 10 minutes.)
Glaze 11⁄2 cups powdered sugar 1⁄8 t. salt 1 T. soft butter
21⁄2 T. cream or evaporated milk
Mix together well.

Sue’s Apple Salad 4 cups cubed apples, unpeeled 1 cup seedless grapes, cut in half 1⁄2 cup raisins 1⁄2 cup sharp shredded Cheddar cheese 2 oz. or 1⁄4 cup black walnuts (may use pecans or English walnuts) 1 cup mayonnaise
Mix apples, grapes, raisins, cheese and nuts with mayonnaise. Add more mayonnaise if needed to coat well. Keep refrigerated.

Piggy Pudding 16 link pork sausages 4-5 tart apples, peeled, cored and diced 1 pkg. (71⁄2 oz.) cornbread mix
Preheat oven to 400 F. Cook sausage until done, piercing with fork to let out fat. Drain. Arrange in a 9-inch square baking dish. Layer diced apples on top. Prepare cornbread batter according to directions. Pour batter over all and bake for 25-30 minutes or until cornbread is done. Serve with warm maple syrup.

Chocolate Apple Cake 13⁄4 cups sugar 1⁄2 cup cooking oil 2 eggs 4 cups diced apples 21⁄4 cups flour, unsifted 1⁄4 cup cocoa 1 t. salt 2 t. baking soda 1 t. vanilla 1 cup nuts, optional
Combine sugar, oil, and eggs. Add apples. Add flour, cocoa, salt, baking soda, vanilla and nuts. Mix well. Batter will be firm. Pour into 9-by-13-inch greased cake pan. Bake at 350 F for 50-60 minutes. Serve warm or cold. Try it plain, frosted or with whipped topping.
